Pumpkin Cinnamon Bun Recipe

Recipe from Kayla, PopCosmo’s Teen Chef: Everyone loves a good cinnamon bun. The combination of warm, soft bread and sweet, sticky cinnamon filling is perfect on a cool Fall day, and it is made even better by mixing in some pumpkin. First, however, we need to distinguish between sticky buns and cinnamon buns. Sticky buns are cinnamon buns baked in a pool of caramel and then drizzled with even more of it after they are baked. Cinnamon buns are served plain or with that delicious sugary icing. My pumpkin cinnamon bun recipe has elements of both; I don't bake them in caramel, but I do douse them with a few spoonfuls of mock caramel sauce. cinnamon bun recipe

The caramel sauce for these treats is not real caramel. Real caramel is tricky and dangerous; to make it, you boil sugar and water until amber and then whisk in cream and sometimes some other minor ingredients. It burns easily and you can get burned easily as well. Overall, it's not much fun to make but is definitely worth it, so I decided to make a topping that tastes just like it but is much faster and less painful. Instead of boiling the sugar and then adding cream, I combine brown sugar, cream, and butter and boil them all together. The brown sugar gives it color and a complex flavor from the molasses and the butter adds a nice richness. The cream, of course, makes it creamy and velvety. Best of all, you don't have to watch it constantly and add ingredients at just the right moment since you just let the mixture boil until it thickens.

My favorite part of cinnamon buns and sticky buns is the bread. Yes, it is bread; it has yeast and lots of flour and is kneaded. That, to me at least, is bread. Don't be intimidated, though, because this bread is exceptionally easy to make. It only proofs (rises) twice, and both times are relatively short. This is proof (no pun intended!) that not all breads require hours slaving away in the kitchen.

And finally, we have that signature swirl. Yes, the streusel. The main reason most people eat cinnamon buns and sticky buns. That spiral of yumminess and cinnamon and sugar and all that is good in this world. So simple, yet so good. The streusel perfumes the whole bun with cinnamon and gives it an extra punch of flavor. Honestly, I can't see pumpkin without cinnamon. The two just go together so well, so I actually doubled the amount of streusel the original recipe called for (don't judge me for that until you try it).

2 1/4 tsp Yeast 4-5 Cups Flour 3/4 Cup Pumpkin Puree 1/3 Cup Milk 4 T Butter, Melted 6 T Butter, Chilled 2 T Butter 1 1/4 Cups Dark Brown Sugar 1 1/4 tsp Salt 1/4 tsp Nutmeg 5 tsp Cinnamon 1/2 Cup Cream

Combine the yeast, 1 tsp sugar, and 1/4 cup warm water in the bowl of a stand mixer. Let stand for five minutes. Add 3 cups flour, pumpkin, milk, melted butter, 2 tsp sugar, salt, and nutmeg. Knead until smooth and elastic, adding more flour as necessary, leaving 1/2 cup.

Grease a large bowl and add the dough, turning to coat. Cover with plastic and let rise for 45 minutes or until doubled.

Meanwhile, combine the remaining sugar, 3/4 cup brown sugar, cinnamon, flour, and chilled butter.

Roll the dough out to an 11x15" slab. Spread on the streusel and press lightly to adhere. Roll up so that it is a 15" log and cut into 12 slices.

Place the slices in greased muffin tins, cover, and let rise for 25 minutes. It can be chilled overnight at this point.

Heat the oven to 375F. Bake for 20 minutes or until cooked through.

Bring the remaining brown sugar, cream, and butter to a boil in a small pot, whisking until sugar dissolves. Boil, stirring occasionally, until thickened, about 8 minutes. Cool and drizzle on the buns.

Popcosmo loves discovering music! We stumbled upon our latest band crush on the lineup for the upcoming Deluna Fest Music Festival in Pensacola, Florida. The minute we heard Lights Resolve, we KNEW we had to find out what these guys are all about. And not because they are totally cute. Or that they’ve (reportedly) wrestled a bear once. Their music ROCKS! But being totally cute and (reportedly) wrestling a bear once are added bonuses. Lights Resolve formed in Long Island, NY in 2006. They have since been named one of 2009’s “Breakout Bands” by Rolling Stone, played with the likes of Panic! At the Disco and Dashboard Confessional, had a song featured on Season 1 of The Jersey Shore AND logged some major downloads for their song “Dreaming of Love,” from the Rock Band video game. Representing Lights Resolve are:

Matthew Reich – Vocals, Guitar; Neal Saini – Drums; Luke Daniels – Bass

We caught up with Matthew who was awesome enough to answer a few random questions for us.

What are 3 things people probably don't know about the band?

We are one of the most diverse bands in terms of race and religion, we like the movie Twins (featuring Arnold Schwarzenegger and Danny DeVito) and we wrestled a bear once.

Were any of you in band or Glee Club in high school? Was it considered geeky or cool? I was a leader in my marching band. I taught the marching band how to play hip hop songs at the football games. I was cool as shit!

Do you guys get along all the time? Anyone have annoying habits? As with brothers, we are constantly bickering and making fun of each other...but all in good taste. Annoying habits? Where do I begin...I possess a bunch as well.

What book is on your nightstand? Reading for Dummies

If you could only take 3 things on tour with you (besides absolute essentials) what would you bring? An avocado, a snorkel and an ice pick.

Do you hang out aside from the band? If the weather's good.

Coffee, Red Bull, Soda or Water? Red Bull because they are fantastic and ship us cases to keep us energized.

If you were a girl, which of the others would you date and why? Neal seems to be the sweetest guy in the band, plus he's got those long locks of love!

What musician/band from the past would you want to work with? The Partridge Family Band would be pretty wild.

3 Surprising School Spirit Ideas

Fall is time for Homecoming, football games and school spirit! We've got 3 cute ideas for showing your pride for your school. There's an option for beauty divas, fashionistas, and DIY divas! 1. Spirit Hands

There are a gazillion nail ideas (show your jazz spirit hands!) but we were interested in one thing and one thing only: cool nail ideas in school colors. Our five faves made it in the final picture (and we tried tons!) From left to right, we have the multi-stripe, the union jack, chevron, double french, and glitter ombre (hard to see on the thumb). We used our striping tips to make perfectly straight manicure lines in a snap. The chevron was a stencil and was also very simple. Although the lighting on the double french isn't great, the tape and polish match perfectly and look amazing together and very clean. Whatever your school colors, each of these ideas is a simple way to show school spirit all week, and we'd suggest picking one main idea and repeating on all fingers, or add a glittery accent nail on your ring finger. Go Team!

2. DIY School Spirit Shirt

This is another very easy idea that you can customize with your school colors. Since we were going with a blue and white theme, we used a blue and white ribbon.

1. gather supplies: liquid stitch glue, ribbon, pocket tee 2.  cut ribbon to line up with pocket 3. place glue on ribbon 4. apply ribbon to tee and let dry

Alternatively, you can use a large piece of fabric to cover the entire pocket area. Since we already had a "school" tee, we went ahead and chose a fun fabric! Any fabric you like is fine, but all-over patterns (swirls, Lilly-esque patterns, etc) that are not linear (stripes and ginghams) are much more forgiving!  They won't show as mistakes.

1. gather supplies: liquid stitch glue, fray stop, fabric, pocket tee 2.  cut fabric to line up with pocket with a 1/2" excess around the edge; place glue at seam and fold over 3. place glue around the entire pocket and fold over the edge so that the fabric is the same size as the pocket 4. place glue on the t-shirt around the edge 5. let dry 6. enjoy!

You can always stencil your school logo on top of the fabric for an added touch, or an a border in a contrasting color. There are plenty of ideas to keep building on the school spirit theme! Let us know your favorite ideas for school spirit!
